  • STEP 4: Season accordingly with salt and black pepper, then set the mushroom aside.
  • STEP 5: Add another tablespoon of butter and remaining oil to the same pot. Add the onions and garlic when the butter melted completely. Cook and stir for around 4 minutes until the vegetables are softened.
  • STEP 6: Add the rice and stir to coat for around 2 minutes.
  • STEP 7: Add the white wine and stir the rice. Scrape the bottom of the pot to release the caramelized mushroom pieces. Cook until the all wine evaporated.
  • STEP 8: Add 1 cup of broth to the rice and stir to mix well. Add the broth cup by cup to ensure all broth is completely absorbed by the rice. Stir the mixture gentle to mix well and prevent the rice from sticking to the bottom of the pan. Cook for around 20 – 25 minutes.
  • STEP 9: Add in the remaining butter, fresh cream, grated cheese and the cooked mushroom. Stir to mix everything.
