10 Best Recipes for Green Tea Cookies

Classic Green Tea Cookies

Ingredients

2 cups of plain all-purpose flour, 2 ⅕ tablespoons of matcha powder, ¾ cup of softened unsalted butter, 1 tablespoon vanilla extract, 130 grams of confectioners’ sugar or powdered sugar, 1 pinch of salt, 2 egg yolks, ¼ cup of white chocolate chips

Tools

Large bowl, strainer, stand mixer (or large bowl with a hand mixer), knife, plastic wrap, baking sheet, parchment paper or silicone baking liner, chopping board, cooling rack

Steps

  1. Step 1: In a large bowl, mix the flour and matcha green tea powder by sifting both dry ingredients using your strainer. Put them aside first. 
  2. Step 2: Get your stand mixer with a paddle attachment beat the softened unsalted butter. Once it is smooth and creamy, add a pinch of salt, confectioners’ sugar, and blend again until soft and light. 
  3. Step 3: Mix well 2 egg yolks and vanilla extract and slowly add the dry ingredients. Continue until the dough is even and smooth.
  4. Step 4: Add white chocolate chips. 
  5. Step 5: Scrape and get the dough, cut it in half and shape the 2 separate doughs into 2 cylinders, about 4 cm in diameter and 18 cm in length, then wrap the logs in your plastic wrap and refrigerate for at least 2 hours until firm. 
  6. Step 6: Once your logs are firm, preheat the oven to 350 ºF. Prepare your baking sheet with parchment paper or silicone baking liner.
  7. Step 7: Unwrap your dough and slice it into rounds and place them on the baking sheet with a distance of 2.5 cm in between. 
  8. Step 8: Bake the rounds at 350 ºF for 15 minutes. 
  9. Step 9: When the edges of the green tea cookies are slightly golden brown, take it out of the oven and let it cool for 5 minutes in the baking sheet. Transfer the green tea cookies to the cooling rack. 

Coconuty-Matcha Green Tea Cookies

Ingredients

⅔ cup of unsweetened shredded coconut, ½ cup of almond flour, ¼ tablespoon of matcha powder, ¼ cup of coconut nectar or agave syrup, 4 teaspoons of melted cocoa butter or coconut oil, 1 teaspoon of vanilla extract

Tools

Baking sheet, parchment paper or silicone baking liner, mixing bowl, wooden spoon, large bowl, strainer, hand mixer, plastic wrap 

Steps

  1. Step1: Preheat the oven to 200°F and put the parchment paper or silicone baking liner to the baking sheet.
  2. Step 2: Prepare and whisk the almond flour, matcha powder, and unsweetened shredded coconut in a mixing bowl. 
  3. Step 3: Slowly mix the coconut nectar or agave syrup, melted cocoa butter or coconut oil, and vanilla extract until smooth.
  4. Step 4: Slightly wet your hands and get the dough. Make 8 pieces of 1.5-inch wide cylinders and put them on the baking sheet with parchment paper or silicone baking liner. You can use plastic wrap in making the rounds to secure the dough.
  5. Step 5: Bake it in a 200°F oven for 25 minutes. Let the green tea cookies cool in a cooling rack or just in the baking sheet for about 20 minutes before tasting it. 

Green Tea Cookie Cheesecake

Ingredients

1 stick softened butter, 4 ounces of cream cheese, 150 grams of sugar, 128 grams of flour, 2 teaspoons of matcha powder, 1 cup of white chocolate chips, 1 cup semi-sweet chocolate chunks

Hand mixer, spatula or wooden spoon, large bowl, baking sheet, parchment paper, scoop

Steps

  1. Step 1: Beat the cream cheese in a large bowl using a hand mixer, spatula, wooden spoon until soft and creamy. 
  2. Step 2: Add the butter and sugar into the bowl. Continue mixing
  3. Step 3: Put the remaining dry ingredients.
  4. Step 4: Add the white chocolate chips and chocolate chumps, then mix together. 
  5. Step 5: Scoop the batter and place them in the baking sheet with parchment paper, with a space of 2 inches in between. You may add chips and chunks on top before baking. 
  6. Step 8: Bake in a 350 F preheated oven for around 15 to 18 minutes. Then let the green tea cookies cool before serving. 

Matcha Green Tea Cookie Snowball

Ingredients

1 cup of unsalted butter softened, 2 cups of all-purpose flour, 2 cups of finely chopped pecans (Get it here!), 1 ½ tablespoons of matcha powder, ½ cup of granulated white sugar, ½ cup of powdered sugar for rolling.

  1. Step 1: Preheat the oven to 325°F. Then prepare two baking sheets and put the silicone baking mats or parchment paper.
  2. Step 2: Add all ingredients except powdered sugar in the stand mixer bowl. Slowly mix until the dough comes together and all ingredients are smooth and even.
  3. Step 3: Get dough in small pieces and roll balls about 1 inch in diameter and put them in the baking sheets, 1 inch apart. 
  4. Step 4: Bake for about 20 minutes or until the edges start to lightly brown.
  5. Step 5: Set aside the green tea cookies and let them cool before rolling them in powdered sugar.

Semi-Dipped Green Tea Cookies

Ingredients

1 cup of all-purpose flour, 1 tablespoon of matcha powder (Get it here!), ¼ teaspoon of kosher salt, 1 stick of softened unsalted butter, ¼ cup of sugar, ¼ cup of chocolate.

Bowl, sifter, electric mixer, baking sheet, parchment paper, plastic wrap,  wire rack

Steps

  1. Step 1: Before anything else, melt your chocolate in the microwave and stir until completely smooth. Set aside melted chocolate for dipping. Preheat the oven to 350°F.
  2. Step 2: Using your sifter, sift together all-purpose flour, matcha powder, and a pinch of salt in a medium bowl.
  3. Step 3: Slowly mix the softened unsalted butter and 1sugar using your electric mixer. Add the flour mixture and mix until the dough comes together.
  4. Step 4: Cut dough in half, put each half on a piece of plastic wrap, and shape both into logs that are 1 ½-inch thick. Refrigerate for at least 30 minutes
  5. Step 5: Slice the shaped dough into ¼-inch thick and place each piece on the baking sheet,  2 inches apart. 
  6. Step 6: In the preheated oven, bake for 8 to 9 minutes. Let the cookies cool completely on a wire rack.
  7. Step 7: Get your melted chocolate and dip half of each green tea cookie. Let it set.

Checkerboard Green Tea Cookies

Ingredients

1 cup softened unsalted butter, ½ cup sugar, 1 tablespoon vanilla extract (Get it here!), 2 ½ cups all-purpose flour, 2 egg yolks, 1 tablespoon matcha powder, ⅛ teaspoon salt.

Steps

  1. Step 1: In a large mixing bowl, beat the softened unsalted butter until fluffy and light. Then add sugar, 2 egg yolks, and vanilla extract until creamy.
  2. Step 2:  Mix and whisk all-purpose flour and salt, then slowly add to the butter mixture until the dough becomes lumpy. Using your clean hands, knead the dough until smooth.
  3. Step 3: Separate the dough into 2 balls. Add the 1 tablespoon of matcha to only one dough ball, and knead. Now, you have 1 regular dough, and 1 matcha dough, divide each of them into two. 
  4. Step 4: Using your plastic wrap, roll, and shape each dough into a 12-inch long cylinder. Arrange and stack the four cylinders on top of each other, creating a checkerboard pattern. Lightly pat the 4 cylinders
  5. Step 5: Wrap the shaped dough with plastic wrap, pat gently to shape it into a square. Refrigerate for at least 2 hours.
  6. Step 6: Get the green tea cookie checkered dough from the fridge and preheat the oven to 360°F. Prepare baking sheets with parchment paper. 
  7. Step 7: Slice the dough using a sharp knife into equal slices then place them on the lined baking sheets.
  8. Step 8: Bake in the preheated oven for about 9 to 15 minutes, until the edges are brown. Let it cool for at least 10 minutes and serve.

Oatmeal Green Tea Cookies

Ingredients

1 tablespoon flaxseed meal (ground flax seeds. Get it here!), 1 ¾ cups of divided rolled oats, ½ cup shelled pistachios, 1 teaspoon baking powder, ¼ teaspoon sea salt, 1 ripe mashed banana, ¼ cup melted coconut oil, ¼ cup turbinado or coconut sugar, 2 teaspoons matcha powder 

Tools

High-speed blender, baking sheet, parchment paper, small bowl, medium bowl, large bowl, whisk, spatula, ice cream scoop, cooling rack

Steps

  1. Step 1: Preheat the oven to 375 °F. Place the parchment paper on the baking sheet. 
  2. Step 2: Mix and stir the flax seeds with filtered water in a small bowl. Place in the fridge for 5 to 10 minutes. Wait until the flax egg is thick and slightly gelatinous.
  3. Step 3: In a high-speed blender, pour and grind 1 cup of oats until the texture is fine. 
  4. Step 4: Transfer the blended oats to a medium bowl and combine with the remaining ¾ cup of oats, baking powder, salt, and pistachios. 
  5. Step 5: In a separate large bowl, stir together the ripe mashed banana, melted coconut oil, sugar, matcha, and the flax egg. 
  6. Step 6: Pour the oat mixture into the banana mixture and stir just until evenly mixed.
  7. Step 7: Using an ice cream scoop, get the mixture and transfer to the prepared baking sheet with parchment paper, 2 inches apart. 
  8. Step 8: Bake for 12 to 14 minutes until light golden brown. Let the green tea cookies cool in a cooling rack for 10 minutes before eating.

Matcha Filling Oreo Cookies

Ingredients

8 ounces softened cream cheese, 2 ounces softened butter, 2 cups confectioners’ sugar, 2 teaspoons matcha powder, Oreo cookies (without filling)

Medium mixing bowl, electric mixer, sifter, rubber spatula, piping bag

Steps

  1. Step 1: Pour butter and cream cheese in a medium mixing bowl then beat using an electric mixer until light and fluffy. 
  2. Step 2: Reduce the speed of the electric mixer and sift in the confectioner’s sugar and matcha while regularly scraping down the sides of the bowl with a rubber spatula.
  3. Step 3: Once well mixed, increase the speed once again and beat for 1 minute until smooth and creamy. Transfer the filling to a piping bag.
  4. Step 4: Prepare your oreo chocolate cookie, then pipe filling on the cookie evenly, then top with another cookie, and gently press on the center of the cookie to squeeze the filling to the edges.
