  • Step 8: Put this pan in the preheated oven and bake at 220 degrees Celsius for about 12 minutes.
  • Step 9: After 12 minutes, reduce the temperature to 180 degrees and bake the cake for another 40 minutes. Once the tea cake cools down, gradually loosen the edges of the cake and remove it from the pan.
  • Step 10: Cut into clean slices and serve warm or cold with coffee or tea.

300g mixture of dried berries and cherries, 225ml hot tea, juice 1 orange (2½fl oz) plus zest, 50g butter, 100g light brown sugar, 1 egg, 225g self-raising flour, 4 tbsp demerara sugar

  • Step 1: Place the dried fruits in a bowl.
  • Step 2: Add in the hot tea, orange juice and orange zest.
  • Step 3: Cover the mixture with cling film and leave overnight or for a minimum of 4 hours
  • Step 4: Preheat the oven to 180 degrees C.
  • Step 5: Grease and line the base of a 2lb loaf tin.
  • Step 6: Beat the butter and sugar until creamy, then beat in the egg followed by the flour.
  • Step 7: Stir in the fruit mixture.
  • Step 8: Spoon the mixture into the baking tin then smooth over the surface with the back of a spoon. Sprinkle all over with a thick layer of demerara sugar.
  • Step 9: Bake for 1 hr. When the fruit cake is ready a skewer inserted into the center will come out clean.
  • Step 10: Leave to cool in the tin. Once cooled, turn out and cut into slices and serve.
